He's also not against adding fat (though he is against adding animal fat. I suppose as an endurance athlete it's nice to feel light and energetic after eating so I could see cycling (pun not intended)a week of heavy meat and fat eating with maybe 3 weeks of heavy vegetable eating. Another thing Dr Fuhrman advocates that I'm a fan of is the blended salad, making a salad in a blender, so it increases the nutrients in leafy greens like lettuce. You can find some of his recipes on the web like putting a banana, avocado, baby lettuce, spinach, & tomato in a blender & other variations.
