Pasteurized are definitely moldy where the raw are not, but there really wasn't much to take a picture of. Should have done it before, but I'd already hacked away the funk before I'd realized it was just the pasteurized stuff. You'll just have to trust @Cass & me on this one. Just like raw milk, the stuff really doesn't go bad. That Mozzarella I pulled out last week was by far the worst! It was truly nasty. @JC – Dug through the cheese this morning. Since I've been buying raw milk cheese I've been struck by how long it lasts in the fridge without going moldy. Over the years I've tried all kinds of things to preserve cheese made from pasteurized milk. I seems to mold so quickly! Problem solved - buy raw milk cheese! It’s true! The loaf of Mozzarella was the worst. Rotten almost clear to the core. The pasteurized smoked Gouda was fine I think. <em>Update: It was the Smoked Maasdam that was fine.</em> I took the worst of them out, but there's still some in there probably.
