Primal Pancakes - Short Stack

I’m now fully endorsing my new version recipe #2 “Almond Butter Pancakes

Inspired by MudBeard, I set out to try my hand once again at primal almond pancakes. I feel my failures in the past may have been from lack of egg, too high of heat, and not enough pan lube.

Primal Pancakes

  • 6 eggs
  • 100g Almond flour
  • ¾ cup heavy cream

1. Mix it up real good. You might try adding a bit of Vanilla :) 2. Medium heat 3. Plenty of butter or coconut oil in the pan. I prefer the coconut oil I think (doesn’t burn). 4. Wait until they bubble and firm up 5. Flip.

Cinnamon Sauce

  • Few ounces heavy cream
  • 2 Tbsp cinnamon
  • 1 Tsp or so of Vanilla
  • Hot water to desired thickness

MudBeard says it feeds two, but it only feeds ½ of Grok. Adjust accordingly.

Recipe #2 Almond Butter Pancakes – The real deal?

  • 2 healthy Tbsp almond butter
  • 2 large eggs
  • ¼ cup shredded coconut

IMO running everything through a blender makes the batter much better & the product more pancake like. I buzz it ultra-smooth in my Vita-Mix.

375° on a non-stick electric griddle (best results). Wait for them to bubble and set-up. Makes about four 6″ pancakes. These pancakes flip, feel, cut & dip just like those pancakes you grew up on, yet are completely paleo! :)

Topping ideas:

  • Frozen berries heated, mashed/blended
  • The above berries mixed with melted butter
  • Just melted butter
  • 100% cacao melted in butter :)
  • Blueberries & Raspberry/Strawberry combos shown below.

    Mmm… looks so good! I really wish almonds liked me more…. I’ll definitely try the cinnamon-goo, though! That would taste good on everything….

    @MarissaOch – I wonder what the ratio for shredded coconut (not flour) would be? You wouldn’t have issues with that :)

    Are you sensitive to nuts in general, or could you sub in a different nut flour?

    Guess my breakfasts aren’t that big. Or it’s the added fruit-carbs :D

    I might be happy with a 9 egg version, but 12 would make me happier. Too many years of huge heavy Bisquick stacks submerged in Ms. Buttersworth I guess. I’ll have to consider these pancake days as cheat days. Full recipe is a huge amount of calories once you add in the other ingredients!

    Hmm… shredded coconut is an interesting idea, for sure! I do coconut crepes (for blintzes) pretty often because I tolerate them pretty well. (Coconut flour is defatted and pretty processed, but it also keeps me out of the grain-flours, so I consider it a necessary evil at this point.)

    I’m only sensitive to almonds… I might try the pancakes with hazelnut – that could be waaaay tasty!

    Definitely try hazelnut meal, Marissa – I love it as a tasty base for pancakes topped with 100% cacao…

    25g-30g hazelnut meal
    1 egg

    Fry in coconut oil.

    Top with cacao and cherries.

    Wowzers. So super easy, and fluffy too!

    Almost melted down some cacao for these ones, but I bought a pile of bulk cinnamon the other day.

    I think these hazelnut pancakes would probably be better than almond anyway. Hazelnuts are the bomb! :) I need to order some Hazelnut flour. I see that Bob’s Red Mill makes it. Hooray!

    Buy unsweetened dessicated coconut that has not been defatted. Whizz 50g to coarse, and 50g to fine in a coffee grinder. Place in bowl. Add 3-4 beaten eggs, pinch of ginger powder and the zest of an unwaxed lemon. Mix together. Add raw milk or coconut milk to achieve batter consistency – Very thick milk shake look.

    Fry in butter or coconut oil, serve with squeezed lemon juice. Yum.
    Sometimes I add raisins or goji berries to the batter.

    Awesome Judy. I’d never had much good luck in the past with coconut pancakes either. I’ll have to give this a try!

    Yeah I am definitely trying those soon. Grok – do you think the second recipe is better from what you were mentioning on twitter?

    Yes, actually I do. The fact that they are just like the real thing as far as cutting, dipping, mouthfeel and ease of cooking is concerned. I feel recipe #2 is superior. If I had some vanilla around here, I’d probably add some of that also.

    For those with no access to Almond butter, I bet you could combined the eggs with dry almonds and blend the crap out of them. Add any dried coconut product and blend the crap out of it again. The batter will come out perfect I’m sure.

    I used my Vita-Mix the second time because I ran out of shredded coconut. Batter was perfect! Just like I had sneaked some Bisquick into the bowl.

    Recipe #2 is way lower-cal too, which means you can eat more!

    The dry nuts and eggs blended worked.

    ALMOND FREE recipe
    75g pecans
    2 large eggs
    ¼ cup shredded or 20-30g dried coconut product
    ¼ cup raw milk (thins batter) or cottage chz + water

    Blend everything until really smooth. Cook at about 375°

    These pancakes were a *little* more crumbly (like the usual paleo pancakes) than recipe #2, but the pecan flavor was fantastic!

    Melt some butter in a small dish & dip in your bite size pieces :)

    You can sub in ground flax meal for coconut too.

    Flaxcakes are a little more “blah” so add a little vanilla or something to bring back some flavor.
