It’s Not Pizza but….

Acorn Squash Pizza

It sure was good!

Recipe:

  • Grease the pan!
  • 1 baked local Acorn Squash
  • Bunch of fresh home grown Tomatoes smashed and boiled down into sauce
  • Havarti and Mozzarella cheeses
  • Scrambled eggs with plenty of butter
  • Bake squash again at like 425° or something until it looks good
  • Add the top layers and switch oven to broil until melted.

I was a little impatient about cooking this one, so the crust wasn’t a “crust”. Not totally sure it ever could be, but it’s still fantastic with a fork!
