Carrot Pizza Recipe

How to make Carrot Crust Pizza

    Step 1:  

  1. Juice yourself a delicious 16-20oz glass of fresh carrot juice & drink it.
  2. Toss the 2 cups-ish of carrot pulp into a bowl.
  3. Add 3 eggs & spices of choice (crushed red peppers, Italian etc..).
  4. Mix that stuff all up.
  5. Step 2:

  6. Boil down a few medium sized tomatoes & some onion on the stove.
  7. Spread dough on a GREASED pizza pan & baked at 400°F for about 20 minutes.
  8. Add the tomato sauce, cheese of choice & toppings.
  9. Baked another 5-10 minutes.
  10. Eat!

Pretty damn delicious, crazy healthy, and vegetarian. I used homemade raw goat milk kefir blue cheese that I made last summer, cottage cheese, soaked raw almonds & pumpkin seeds, and red bell peppers for my toppings.

For a little more flavor, you can add more egg or some cheese to the crust.

    Looks very good. My juicer is coming next week, so I’ll be sure to try this with the carrot pulp. So many reasons to be excited for the juicer…

    @Kevin Your juicer tweet is what inspired me to get mine out from it’s dusty cupboard corner, so thanks! Last time I’d used it was last fall when I juiced some apples to make cider vinegar.

    I love juicing, but already have a calorie management problem, so I usually end up eating (or vitamixing) the whole plant for the volume to keep my belly happy :) That & reducing the extra $100 a week on the grocery bill from juicing.

    It is pretty good. Not quite as good as the others (check out my pizza tag). It has passed the test with a few neolithic sugar junkies though. Of course anything with tomato sauce and cheese is pretty hard to screw up ;)

    I found your site looking for veggies to eat. I stopped eating meat a while back because of health issues.

    Looks great!

    I don’t have a juicer, but I’ve made similar recipes by grating up veggies (like zucchini) and then squeezing out the water. I’m sure that would work with the carrot, too, although it makes the recipe a little more time consuming.

    OMG! What a cool idea! I don’t juice much but when I do I balk at having to throw out all the carrot pulp (no place for a garden or compost in w/my townhouse). Very neat. JUST found your site through Mark’s Daily Apple and your comment on it! I like your lower calorie density pizz tips and pictures!

    @Rachel surprisingly enough it was quiet a hit. The other varieties I’ve made are better since the carrot pulp has most of the flavor removed, but hey… pizza is pizza :)
